1.两个猪蹄洗净剁成小块备用(大约在两斤左右)

5.锅里油烧热,冰糖放进去小火炒化成焦糖色

6.这时把猪蹄放进去炒上糖色

7.之后加料酒烹调去腥

10.盖锅盖,大火煮开转中火炖煮40分钟

11.40分钟后开盖大火收汁

配料:
猪蹄一边、葱段适量、料酒两勺、姜片两三片、花椒适量、八角两个、香叶两片、干山楂片三个、啤酒一罐、豆瓣酱两勺、生抽或老抽一勺、白糖一小勺、小米椒四个、猪油适量、熟芝麻适量、葱花适量、姜丝适量
烹饪步骤:
1.猪蹄清水浸泡一小时,泡出血水

2.准备好部分食材

3.泡好的猪蹄洗干净,冷水下锅,放入葱段(二三段)料酒及姜片大火煮开后再煮两分钟,沥干水份备用

4.锅里放少许猪油,倒入猪蹄,中火煸至猪皮焦黄

6.锅里再热油,放入豆瓣酱炒出红油

7.再放入葱段,姜丝,八角,花椒,香叶和干山楂炒出香味(小火)

8.倒入猪蹄翻炒,加入一勺料酒,一勺生抽或者老抽,少许白糖炒至上色

9.接着倒入一大罐啤酒,我用的是330毫升的

10.没过猪蹄,大火煮开

11.改小火炖90分钟,炖好后放入适量小米椒改大火收汁,不要全部收完,留适量汤汁

1.猪蹄切成两半,用橘皮泡两个小时,中途换2-3次水
