芹菜220克、鸡胗250克、大蒜2瓣、姜2片、小米椒2个、葱适量、生抽2汤匙、料酒1大匙、盐适量、鸡精适量、食用油适量
烹饪步骤:
1.鸡胗洗净后放入开水锅中,焯烫变色捞出晾凉

2.将鸡胗切成薄厚适中的片状,太薄炒的时候容易回缩的厉害,太厚又炒不透

3.芹菜摘去叶子留茎,洗净后切成长度约为4-5厘米的小段

4.准备其他辅料:大蒜切片,姜切丝,小米椒切斜段,再切点葱花

5.锅中倒适量食用油烧至五成热,放入葱姜蒜小火炒出香味儿

6.接着放入鸡胗改大火快速翻炒约一分钟,炒至鸡胗变色

7.然后调入生抽、料酒继续翻炒,刚开始会有一些水分渗出,依然保持大火翻炒

8.待水分差不多蒸发后放入芹菜和小米椒,翻炒约两分钟
